Our Hyperlipidemia
Vegetable Pulao
Preparation Time : 50 mins, Serves: 04

Ingredients :
  • 3 cups of brown rice, boiled
  • A bunch of coriander leaves
  • 3-4 green chilies
  • 3 medium onions, sliced
  • ½ medium onion, chopped
  • A few sticks of cinnamon
  • Cardamom seeds powder ½ tsf
  • Cloves- 6-7 powdered
  • 1 tsp red chili powder
  • Salt to taste
  • 7 to 8 cloves garlic
  • 1-inch piece ginger
  • 2 tsp olive oil
  • 1 cup of cauliflower & broccoli flowerets
  • ½ cup beans
  • ½ cup diced lauki- bottle gaurd
  • 1 tbsp fresh green peas (optional)
Method :
Grind together the 1/2 onion, garlic, ginger and coriander in the blender, to make a smooth paste, keep aside. Sauté onions in olive oil; add the cloves, cinnamon and cardamom. When onions are browned properly, add the red chili powder and sauté for 30-45 seconds. Now add all the vegetables, including the cauliflower and sprinkle some water on it.

Keep covered and cook on a low flame till the vegetables are cooked. This might take approximately 15-20 minutes. Keep sprinkling water periodically but do not add excess water. When the vegetables are done, transfer the vegetables to a large mixing dish, add all the boiled rice, salt to taste and the blended masala. Mix thoroughly and then heat it either in a microwave or on low heat on the cooking range. (It is heated again to let the salt spread across the dish)  Serve hot with raita.
