Our Diabetes Diet
Wheat bran Cutlets
Ingredients :
  • 1 cup toasted wheat bran
  • ½ cup roasted channa powder
  • 1 large potato, boiled and mashed well (optional)
  • 225 gm low fat paneer ( cottage cheese) mashed
  • A bunch of spinach finely chopped (wash thoroughly before chopping)
  • 1 onion finely chopped
  • 1 piece ginger crushed
  • 5-6 garlic cloves crushed
  • 3 green chilies finely chopped
  • Salt to taste
  • Olive oil to grill
Method :
Press out all moisture from spinach, by dabbing in the fold of a napkin. Take potatoes in a large mixing bowl. Add vegetables, garlic, chilies, ginger, paneer and salt. Sprinkle channa powder and wheat bran over the ingredients. Mix all ingredients of the bowl by hand, to form a soft lump. Take portions of mixture, and make it into any form of cutlets. Refrigerate for 10 minutes covering with a moist cloth. Take a nonstick pan or a greased skillet, cook till golden on both sides. Serve hot with sauce or chutneys.
