Our Diabetes Diet
Soy koftas (Soy cutlets in gravy)
Ingredients :
  • 1-cup soybean flour
  • 250 Gms bottle gourd, grated
  • 1 tsp olive oil / salt to taste
  • ½tsp chili powder / ¼ tsp turmeric powder
  • 2-3 green chilies finely chopped
  • For gravy
    • 2 onions finely chopped
    • 2 tomatoes finely chopped
    • 3-4 cloves garlic finely chopped
    • 1 tsp ginger finely chopped
    • 1 tsp chili powder /1 tsp garam masala
    • ¼ tsp turmeric powder
    • 2 tsp muskmelon seeds paste
    • 3 tsp coriander
    • 1 tsp olive oil / salt to taste
    • 1 cup water

Method :

Heat oil in a non-stick pan; add the bottle gourd, chili powder, turmeric and salt. Close lid and cook for 5 min. Add the soy flour & green chilies and toss for 3-4 min. When cool shape into small round balls. Roast in a non-stick pan with very little oil till golden brown.

For gravy
Heat oil in a pan, sauté garlic and add onions/ ginger; sauté till golden brown. Add tomatoes and all spices, paste and salt. Sauté for 4-5 min. add water and bring to a boil. Add the koftas and leave it on low heat for 5 min. Garnish with coriander before serving.
